Ingredients for Brekkie Cups:
- Filling.
- 1 tbsp olive oil, extra virgin.
- 1 small onion finely chopped.
- 1 tsp crushed garlic.
- 1 punet of sliced button mushrooms (about 250g).
- 1/2 tsp mixed herbs.
- 1/4 tsp rosemary.
- 1 tsp roasted cumin powder.
- 1 1/2 tsp cayenne pepper.
- salt and pepper to season.
- 2 cups cooked and sliced chilli cheese grillers.
- Egg mixture.
- 5 eggs.
- 1/4 cup milk.
- to taste Garlic Salt and pepper.
- 1/2 tsp Paprika.
- Topping.
- 1 cup grated cheese.
Step by step how to cook Brekkie Cups:
- Prepare mushrooms as follows: heat olive oil then add onions and saute until translucent. Stir in garlic then add mushrooms and remaining ingredients for the stuffing. Allow to cook. Lastly add in the sliced chilli cheese grillers and heat through..
- For egg mixture, combine eggs, milk and seasonings and beat well..
- Using a greased muffin or cupcake baking tray, fill stuffing 3/4 way into cups..
- Top up with egg mixture and press down gently to ensure that egg mixture goes to bottom and covers all the filling..
- Top with grated cheese and bake at 140°C for 15 to 20 mins until eggs are cooked through..
