Ingredients for Fresh Pasta:

  1. 250 g 00 (Pasta) Flour.
  2. 2 free-range eggs.
  3. 1 tablespoon Extra virgin olive oil.
  4. 1 litre water to boil pasta.
  5. 1 pinch sea salt.

Step by step how to cook Fresh Pasta:

  1. On a clean surface, tip out the flour and make a well in the middle of the flour, add the eggs and slowly beat to incorporate..
  2. Adding more flour little by little to form a dough. Knead for 5 minutes then set aside in clingfilm in the fridge to prove for 30 minutes..
  3. Using either a pasta machine or a rolling pin, roll out the pasta to desired thickness (about 2mm thick) which is quite thin, cut into long strips or use a spaghetti or tagliatelle attachment. Once done. Bring the water to a rapid boil, add the olive oil and a good pinch of sea salt and boil pasta for 3-5 minutes per batch. Enjoy with any homemade sauce! buon apetito! :).
