Ingredients for New York strip roast:
- 5 lb New York strip roast.
- Crust/glaze.
- 1 oz Dijon mustard.
- 1 tsp balsamic vinegar.
- 1/4 oz Worcestershire sauce.
- 1/2 tbsp honey.
- 1/2 tbsp extra virgin olive oil.
- 1 pinch sea salt.
- 2 pinch fresh ground course black pepper.
- 1 pinch white pepper.
- 3 pinch paprika.
- 1 tbsp garlic powder.
- 1 oz well packed brown sugar.
Step by step how to cook New York strip roast:
- Take out the roast at least 1-2 hours before cooking, and let it sit out to get to room temp.
- Cross score the fat cap on the roast.
- preheat oven too 500°F.
- About 45 mins before cooking make and apply crust/glaze.
- Place roast fat side up in broiling pan with small amount of water in bottom (1/2 cup or so) cook for15 mins at the 500.
- Turn down oven to 300 while roast is still in. Cook for 12-18 mins per pound.
- Take out roast and loosely tent in tinfoil for 15-20 mins to allow juices to redistribute before cutting.
