Ingredients for Spinach Lasagne:

- 1 tablespoon olive oil.
- 1 onion chopped.
- 3 garlic cloves.
- 500 g mince.
- 1 carrot (shredded).
- 390 g (1 can) chopped tomatoes.
- 1 teaspoon salt.
- 1 teaspoon black pepper.
- White sauce.
- 100 g butter.
- 3/4 cup flour.
- 5 cups milk.
- 1 teaspoon salt.
- 1 teaspoon black pepper.
- 100 g cheddar cheese (grated).

- 250 g spinach lasagne.
- 2 cups pumpkin slices.
- 2 cups baby spinash.
- 100 g cheddar cheese (grated).

Step by step how to cook Spinach Lasagne:
- Heat oil in a pan and brown the onions. Add the garlic and brown. Spoon into a bowl..

- Layer in the following order: white sauce, lasagne, pumpkin, cheese, mince and spinach. Repeat for 3 layers..
- Note: do not overlap the lasagne sheets. Break in half to fill caps..
- End with thick layer of white sauce and sprinkle with cheese, parsley and black pepper..
- Bake for 40 minutes..
- Cover with foil and rest for 15-30 minutes till set..
