Ingredients for Aloo Kuyyan:
- Potatoes 3 boiled.
- Chutney:1/4 cup tamarind pulp.
- 1-2 tbsp Sugar,pinch of salt.
- 1/2 tsp Chaat Masala.
Step by step how to cook Aloo Kuyyan:
- Cook tamarind pulp, sugar, salt, chaat masala,Knorr ketchup for 5 minutes on a medium flame,let it cool. Shouldn't be very thick..
- Boil the potatoes such thay they should not be too soft and do not break apart. Let them cool down for a bit.
- Take off their skin and then halve them from the middle.(If you attempt this when they are too hot, they will break).
- Very gently, scoop the potato out from the middle so that you are left with a bowl-shaped potato..
- Fill this bowl-shaped potato with the chutney and then cover it with the potato you had scooped out..
- I recreated the recipe and added boiled chickpeas over the chutney and garnish with fresh coriander..
