Ingredients for Aloo Kuyyan:

  1. Potatoes 3 boiled.
  2. Chutney:1/4 cup tamarind pulp.
  3. 1-2 tbsp Sugar,pinch of salt.
  4. 1/2 tsp Chaat Masala.

Step by step how to cook Aloo Kuyyan:

  1. Cook tamarind pulp, sugar, salt, chaat masala,Knorr ketchup for 5 minutes on a medium flame,let it cool. Shouldn't be very thick..
  2. Boil the potatoes such thay they should not be too soft and do not break apart. Let them cool down for a bit.
  3. Take off their skin and then halve them from the middle.(If you attempt this when they are too hot, they will break).
  4. Very gently, scoop the potato out from the middle so that you are left with a bowl-shaped potato..
  5. Fill this bowl-shaped potato with the chutney and then cover it with the potato you had scooped out..
  6. I recreated the recipe and added boiled chickpeas over the chutney and garnish with fresh coriander..
