These carrot muffins are my favorite snack during the day. They aren't too sweet, are super moist, and have just the perfect amount of spice and crunch. Many people I know secretly love carrot cake only. Carrot Muffins have the look and flavor of a carrot cake only they are in muffin form. The original name for these muffins was 'Morning Muffin Magic' but you may also know them as 'Morning Glory.

Ingredients for Carrot muffins:
- Vanilla muffin premix (also all the wet Ingredients as suggested by packaging).
- 1 cup carrots.
- 1/4 cup mixed seeds.
- 60 g raw mixed nuts.
- 1 tablespoon cinnamon spice.
- 1 tablespoon mixed spice.
- 1 tablespoon ground ginger.
- 40 ml extra milk for added moisture.
Combine raisins and water in a small bowl. Moist and fluffy carrot muffins made healthy with whole wheat flour, applesauce, and honey. They are amazingly delicious you would never know they are "healthy" and contain NO SUGAR! Healthy carrot muffins that are naturally sweetened, moist and fluffy.

- Mix all dry ingredients (muffin mix, mixed seeds, cinnamon, mixed spice, ground ginger). Also, crush 30g of mixed nuts and add to dry mixture.
- Prepare wet mixture as per vanilla premix instruction. Add extra 40ml milk and finely grated carrot) to compensate for additional dry ingredients.
- Mix wet and dry ingredients.
- Scoop muffin mixture into baking trays. Sprinkler remainder of 30g mixed nuts on top to garnish muffins.
- Bake for -+30minutes. Once fully baked allow to cool.
