Ingredients for Chakalaka and Chicken Rice:
- Cooking oil.
- 1 small onion.
- 1 medium bell pepper.
- 1-2 chilli peppers.
- 1 medium carrot.
- 1 Roma tomato.
- 1 can baked beans.
- 1 cup cooked rice.
- 1 large chicken breast.
- Half or 1 chicken stock cube.
- Turmeric or Curry powder.
- Chicken spice.
Step by step how to cook Chakalaka and Chicken Rice:
- Cut the chicken into cubes or strips and rub with the chicken spice. Set it aside..
- Dice onion, bell pepper, and chilli peppers.
- Heat up 2 tbsp of cooking oil and fry the veggies in Step 2 until soft, stirring occasionally.
- In the meantime, grate the carrot and chop up the tomato.
- Add turmeric and/or curry powder and the chicken stock cube to the veggies in the pot and stir.
- Add the carrot, tomato and chicken to the pot, stir, then close the lid and let it cook at medium heat. Stir every minute or so..
- Open the can of beans and drain most of the tomato sauce if it's a lot (I like using cheap canned beans for this but they tend to have a LOT of watery tomato sauce).
- Once the chicken and veggies are done, turn off the stove and add the beans and rice. Stir well until everything is warmed up..
- Serve and enjoy..
