Ingredients for Eggless Savoury Breakfast Muffins (packed with Veggies & Cheese):
- 1 cup Semolina/Rava/Suji (fine variety).
- 2 tbsp Whole Wheat Flour.
- 1 small grated Carrot.
- 1/3 cup Sweet Corn or veggies of choice.
- 1/2 cup fresh Yoghurt /Curd.
- 1/4 cup Olive Oil.
- 1/4 cup grated Cheese (optional).
- 1/2 tsp baking powder.
- 1/4 tsp baking soda.
- Salt & some black pepper as per taste.
- 1 tsp Apple Cider Vinegar (optional).
- 2 tbsp Water (As per batter consistency needed).
Step by step how to cook Eggless Savoury Breakfast Muffins (packed with Veggies & Cheese):
- Mix everything in a big bowl to a batter consistency..
- Let this batter rest for 15 mins..
- Grease/dust the muffin tray & preheat the oven at 180°C..
- Batter will now be little thick but pouring consistency. Pour & Bake at 180°C for 25 mins. Serve warm!.
- Refrigerate to Store for 2-3 days & make it warm before serving..
- Serving suggestions:- 1.) Apply some ketchup on top along with some more cheese & seasoning and bake again for 2 mins at 180°C or 2.) Simply with tadka tomato chutney..
