Ingredients for Carrot Cake:

  1. 3 cups self raising flour.
  2. 3 cups grated carrots.
  3. 250 g margarine.
  4. 1 cup brown sugar.
  5. 1 TBS lemon zest.
  6. 1 TSP bicarbonate of soda.
  7. 1 TBS mixed spice.
  8. 1 TBS ground nutmeg.
  9. 1 TBS cinnamon.
  10. 1 TBS ground ginger.
  11. 4 eggs.
  12. 250 ml buttermilk.

Step by step how to cook Carrot Cake:

  1. Preheat oven 180 degrees Celsius.
  2. Take your mixing bowl pour your margarine and sugar then mix.
  3. After mixing follows with eggs crack each separately then pour to the mixture.
  4. Once it's poured to the sugar and margarine mixture then mix again.
  5. After the mixing of eggs then pour your carrots and a lemon juice.
  6. Use a spatula to mix now then followed by sifted flour on the dough.
  7. Then pour the bircabonate of soda, mixed spice, nutmeg, cinnamon and ginger.
  8. Mix the dough by folding slowly but meat.
