Ingredients for Poosanikai Mor Kuzhambu/ Ash Gourd Buttermilk Curry:

  1. 1/4 kg Ash Gourd/Poosanikai cut into small pieces.
  2. 1/2 cup grated coconut.
  3. 1 Tbsp Toor dal.
  4. 1 1/2 Tbsp Coriander seeds.
  5. 1/2 Tbsp Cumin seeds.
  6. 4 Garlic pods.
  7. 5 Dry Red Chillies broken.
  8. 1/2 Tbsp Rice.
  9. 7 Shallots roughly chopped.
  10. 1 Medium size Onion chopped.
  11. leaves Few Curry.
  12. leaves Few Coriander.
  13. 2 Tbsp Oil.
  14. 1/2 tsp Mustard seeds.
  15. 1/2 tsp Turmeric powder.
  16. As required Buttermilk.
  17. As per taste Salt.
  18. as required Water.

Step by step how to cook Poosanikai Mor Kuzhambu/ Ash Gourd Buttermilk Curry:

  1. Place a pan in the stove. Switch on the flame. Add Ash Gourd pieces and some water for it to cook. Cover and cook for 15mins until it becomes like glass colour..
  2. In a mixie,add grated coconut, shallots, coriander seeds, cumin seeds,toor dal, rice, red chillies and garlic. Grind to form a smooth paste by adding some water..
  3. Place another curry pan in the stove. Switch on the flame. Add oil..
  4. Once the oil gets heat, add mustard seeds(you can also add 1 dry red chilli for extra spicy). Once it gets crackled add onions and curry leaves. Saute until onions become translucent..
  5. Then add the cooked ash gourd. Mix well..
  6. Then add the ground paste, turmeric powder,salt and buttermilk as required for curry. Half cover the currypan with the lid and cook for 15 mins in low medium flame..
  7. Add coriander leaves. Mix it and transfer to a bowl..
  8. Now it's ready to serve with hot rice..
