Ingredients for Stuffed Zucchini w/ homemade Sauce:
- 4 average size zuchinni.
- 8 vine tomatoes.
- 1 lb ground chicken.
- 1/4 extra virgin olive oil.
- 1/4 c extra virgin olive oil.
- 2 garlic cloves.
- 1/2 medium onion.
- 2 Tbsp fresh basil (heaping).
- 2 tsp Italian seasoning.
- 1 tsp garlic salt.
- 1 tsp onion salt.
- Shredded Mozzerla.
Step by step how to cook Stuffed Zucchini w/ homemade Sauce:
- Steam tomatoes until skins begin to crack. Approx 10 minutes. Once they cracked, dump them in a bowl of cold water and peel. Slice them in 1/2 and seed them. Place in food processor/blender and blend until desired consistency..
- Brown ground chicken, garlic and onions on the stove top..
- In the meantime, slice the Zucchini in 1/2 lengthwise and hollow out the middle to make a "boat"..
