Ingredients for Vadapav Twister:
- For the outer layer.
- 250 gms maida.
- 1 tbsp sugar.
- 1 tsp salt.
- 1 tsp instant active yeast.
- 3/4 cup lukewarm milk.
- 2 tbsp butter.
- for Vada.
- 500 gms potato - boiled and mashed.
- 150-200 gms gram flour.
- to taste salt.
- 1 pinch hing.
- 1 pinch baking soda.
- water.
- oil for frying.
- 2 tsp chilli garlic paste.
- 2 tbsp spoon.
- 8-10 curry leaves.
- 1 tsp mustard seeds.
- 1 tsp coriander seeds.
- 1 tsp fennel seeds.
- 1/2 tsp turmeric powder.
- 1 tsp lemon juice.
- 1 tbsp coriander leaves.
- peanut garlic chutney.
- 1 tbsp oil.
- 1 tbsp coriander seeds.
- 1 tbsp fennel seeds.
- 1 tbsp sesame seeds.
- 12-15 whole kashmiri chilli.
- 10-12 garlic cloves.
- 2 tbsp peanuts.
- 2 tbsp grated coconut.
- to taste salt.
- 1 pinch hing.
- For green chutney.
- 1 bowl coriander leaves.
- 2-3 green chilli.
- 3-4 garlic cloves.
- to taste salt.
- 1 tbsp lemon juice.
Step by step how to cook Vadapav Twister:
- In a bowl add maida, instant yeast, sugar, salt. add lukewarm milk and knead a soft dough. add butter step by step and continuously knead for 10-12 minutes unless the dough becomes very smooth. cover the dough with damp cloth and keep aside for at least an hour for proofing..
- For Peanut garlic chutney - in a pan add oil and one by one add coriander seed, fennel seeds, sesame seeds, garlic, dry chilli, peanuts and roast on the slow flame. turn off the flame and add grated coconut. allow mix to cool completely and grind coarse powder..
- For green chutney - combine all the ingredients and grind it into a fine paste..
- For stuffing - add oil to the kadai. add mustard seeds, coriander seeds, fennel seeds, ginger chilli paste, curry leaves and mix well. add mashed potato, salt, turmeric powder, lemon juice and coriander leaves. mixture is ready. make small oval shape balls out of it..
- In a bowl add gram flour, salt, hing and water and make a pakoda batter. add soda. dip each potato vada into this batter and deep fry into the oil..
- Now take the maida dough. punch and knead the dough for 2-3 minutes to remove all the air out of it. now divide the dough into 11 balls. roll each ball into small round shape. from a center put a cut. apply both the chutney and place vada at one end. start rolling from one end to another. make all twisters following the same procedure. I would suggest to follow pics to understand folding in a better way. cover these twisters with a damp cloth and keep aside for half an hour..
- Now preheat the microwave or Oven at 200 degree. apply milk or butter gently with a brush over the twisters and bake for 15-20 minutes. serve hot with chutneys..
